*OTHER PARKING OPTIONS : Salty Senorita Old Town will run a bus to and from the festival every hour, all weekend long. The Lucky Express bus that runs a loop from Scottsdale Fashion Square, the W Scottsdale Hotel, and Talking Stick Casino (starting at 4pm every day) adds a Taco Festival stop to its route. And you can always just cab it, Discount Cab will have a fleet stationed at the Exit for safe rides home. 
HOW THE FEST WORKS…
A General Admission ticket provides access to taco-topia. Inside the event, you’ll find about 50 restaurants dishing out $2 tacos and bars and beverage station serving margaritas, beer, water, and soda. The entire festival works on a token system – so you will purchase tokens worth $2 each and use those as cash. Vendors will be on hand to sell other food (mostly desserts) as well. ATMs will be on site, but you can use a credit card if desired.

GENERAL ADMISSION
Experience a taco-topia of epic proportions. Over 50 restaurants and food trucks will serve $2 tacos (sold separately) with some of the most unique recipes you’ve ever tasted. Watch live bands from surf and rock to mariachi and Latin all weekend long. There’s Lucha Libre wrestling shows all weekend, too. Don’t miss hilarious eating contests, chile pepper-eating challenges, and the entertaining chihuahua beauty pageant.
VIP
Upon checking in at the event, receive enough tokens for five alcoholic beverages, one water or soda, and 10 tacos. You’ll also have access to a VIP tent with shaded seating and private bathrooms. VIP’s will also enjoy Taco Beach, a literal sandy beach area facing the main stage. Free chips, salsa, and hot, buttered tortillas are also part of the package, courtesy of My Nana’s Best Tasting. Oh, there’s also an overwhelming feeling of taco awesomeness.
TEQUILA EXPO
Over 30 brands will make over 100 types of tequila available in this Saturday-only tent. This ticket comes with a wristband good for 10 samples of fine tequila. Tequila Expo passes must be purchased in conjunction with a GA or VIP ticket. We highly recommend purchasing these passes online – the Expo will sell out.

Posole I Love... Years ago when I first moved to Phoenix in the late 80's I met a women Lucy who's mom made Posole a few times a month. That was the begining of my love for Posole.

After many years I've  learned to make green, a chilli Verde Posole, red Posole, Veterinarian Posole out of root veggies and I love a chicken Posole.

 My 1st thoughts about Posole was, WHAT was it? Was it a Soup a Stew, What was it?  Hominy... what's hominy, hominy is corn, what.... I never heard of pork soup after all I came from Erie PA .. Italian Food.....NO Mexican food when I lived there in the late 70 early 80's. I only knew  Italian Wedding Soup, Minestrone, Stracciatella... and lots of pasta dishes...

Posole is a dish I do Love now.

A PORK Soup topped with raw cabbage, radish, lime,  & onion.  I have been making since the 80's . The garnish add the perfect crunch to the soup a must have.  I have also had Posole topped with tortilla strips, crumbled queso fresco or feta, toasted dried Mexican oregano.

Pozole is made with nixtamalized cacahuazintle corn variety of corn with large, tough kernels. The kernels are pre-cooked in an alkaline solution that makes them lose their outer layer and softens them. This process makes the solution foamy, hence its Nahuatl name, and when boiled, the kernels open like flowers.  Hominy (What IS) fluffed and softened corn.... 

Ingredients:

  • 4 quarts of water or broth
  • 3-4 pounds pork shoulder Cubed or sliced. I love using the shoulder with the rind on it
  • 3 cans Hominy - rinsed
  • 1 white onion cut in quarts
  • 3 celery ribs
  • 2 fresh green chili chopped & cleaned
  • 1 jalapeno, seeded, and finely diced
  • 10 large garlic cloves
  • zest of 1 orange 
  • Salt to taste
 RED Sauce - Put in the Blender
  • 5 Ancho& 5 Guajillo pepper cleaned, seeded & deveined
  • 6 Garlic cloves
  • 1 medium white onion coarsely chopped
  • 2 Tablespoon vegetable or canola oil
  • 1/2 teaspoon dry Mexican oregano
  • 1 teaspoon cumin
  • 1/4 teaspoon ground cloves (optional)
  • salt to taste

For the Garnish:

  • 1 Head of lettuce finely shredded
  • 1 1/2 cup of onions, finely chopped
  • 1 1/2 cup of radishes sliced 
  • Mexican oregano
  •  Tostadas
  • Limes, cut in wedges
  • Avocado chopped
  • One bunch cilantro, chopped

Heat oil and brown the pork, saute onion, green chilli, celery & garlic in a dutch oven or a pot. Add the water or broth and simmer for 45minuts to an hour.

For the red sauce. Place cleaned Ancho & Guajillo dried pepper cleaned in blender with  6 Garlic cloves, 1/2 medium white onion coarsely chopped, oregano, cumin , olive oil and clove. Add 2-3 cups of broth if veggies are in it , no big deal and process to smooth.. NO MEAT just broth. process red chilli sauce till smooth then return to pot.  

ADD hominy in the pot...... then simmer red chilli sauce  additional 1 hr. /2hrs.  Add a little beef, chicken broth or water to thin out if necessary The last 1/2 hr. or so grate fresh orange zest and add oregano. 

DONT forget the salt, this soup does need salt due to the hominy..

Wells Fargo Lowers Credit Requirements for FHA Loans - Good NEWs Phoenix Arizona





Wells Fargo has announced that it will accept lower credit scores for loans backed by the Federal Housing Administration. (That's GOOD NEWS)

Relaxes Home Loan Qualifications  

A low credit score may no longer get in the way of buying a home. One
of the country's leading lenders is easing some of its mortgage loan
qualifications and getting back into the sub-prime market.

Wells Fargo will sign off on government-backed home loans if you have
a credit score of at least 600. The bank dropped its minimum credit
requirement by 40 points.



This is a big move for the corporate giant. Wells Fargo is trying to
make up for its overall revenue losses by getting back into the subprime
market.


 “We have dropped our FICO minimum for FHA from 640 to 600,”  says
Wells Fargo Executive Vice President Franklin Codel, adding that the
move is a way for the bank to start “opening up our credit box more.”



Codel says the bank is looking to expand mortgage-credit availability
now that it has significantly reduced its repurchase risk. Wells Fargo
was among several banks that had to pay millions to Fannie Mae and
Freddie Mac to resolve repurchase claims from loans that were bought by
the GSEs and then went sour during the housing bust.
